Bioluminescence. When the sea turns to stars.
On moonless nights in select coves around Havelock and Long Island, plankton in the water glow electric-blue with every paddle stroke. Drag a hand through the water and watch it light up.
When to go
Strictly on no-moon and waning-moon nights — the darker the better. We schedule trips against the lunar calendar; if the moon's too bright we'll suggest an alternate night.
How you experience it
Either by transparent kayak with a guide, or by a slow-cruise boat that drops anchor in the cove. The water lights up around the hull, paddles and any swimmer who slips in.
Photography
Phones won't capture it — bring a camera that does long exposures (or just put the camera away and watch). Either way, it's the kind of memory that goes home with you.
